Pomelo and Berry Salad
Yield: serves 2
Ingredients
- 1 pomelo, peel, pith and membrane removed, diced.
- Any juice from the pomelo you can save
- 1 cup berries of choice
- 1 medium apple, quartered, cored, and thinly sliced
- 1 teaspoon agave nectar or honey, teaspoons if the berries are tart
- 1/8 teaspoon salt
Procedure
- Combine all ingredients in a bowl. Ideally, allow ingredients to sit for 10 minutes before serving.
