Shaved Parmesan...

There are a few ways to "shave" parmesan cheese and get those thin sheets that are often seen in restaurants.

1. Use a microplane small or large shaver;

2. Use a truffle shaver;

3. Use a POTATO PEELER.  That's right, no need for special equipment - just use a plain old vegetable/potato peeler and you'll get thin sheets of shaved parmesan for your salad!

We now carry two stick-free products to make cooking easier:
1. Tefmats
- which keep food from sticking to sheet pans (cookies, meats, etc.) and YOU CAN USE THEM UNDER THE BROILER!
2. Oven Liners:
made of the same stuff as the Tefmats - put one under the heating element in your oven. When there' a spill just wipe it off with a sponge. Cleaning the oven was never easier.
3. Handpainted "AndyFood" aprons are availabale.  They're great as take-home souvenirs of your AndyFood event.  (Generally we need 2 weeks notice to ensure availabiliy).  Aprons are $20 each plus tax.

Recipe of the Month

Salad of

Grilled Endive, Romaine, and Asparagus with Shaved Parmesan

Serves 6 - 8
  • 3 tablespoons Balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, roughly chopped
  • ¼ teaspoon freshly ground black pepper
  • kosher salt, to taste
  • 3 Belgian endives., halved lengthwise
  • 2 hearts Romaine, halved lengthwise
  • 1 pound asparagus, trimmed
  • 1/3 cup freshly grated/shaved Parmesan (See tip of the month - at the top of the page.)
  1. Combine vinegar, oil, garlic, salt and pepper.  Whisk together and set aside.
  2. Place the romaine cut side down on a hot grill.  Cook until grill marks appear on the cut side, 2 to 4 minutes.
  3. Place on a cutting board, and cut across the leaves, making ½-inch ribbons.
  4. Grill the endives and asparagus in the same manner.  Cut endive into thin shreds.. cut asparagus into 1-inch pieces.
  5. Add to bowl and toss with dressing.
  6. Place on serving plates and top with parmesan and a drizzle of balsamic syrup
  7. Place grilled lettuce in a bowl, add dressing and toss to coat.
